(UPDATE)
After a power-down, everything is OK - all Vids play fine.
Very strange, but glad everything is working, now.

Same issue as you describe experienced upon update to iOS 5.1 on a Z130BT. Video blank, but audio OK.
DVD works OK, and movies on the iPhone 4S movies library viewable (both A&V) in "app mode".
