I'd like to try to get it down to one single layer disc (I dont have a dual layer burner) and Id like to try and mod the sounds as well as add my own pictures, maybe mod the gauges display if possible.

You can't do it. It has to be dual layer.

You'd have to find the poi information that doesn't pertain to where you are locaated. Then delete that and hope the avic doesn't have heartfailure because some of the data is missing.
