Hi,

I have a Z1 that has been upgraded. I picked up a couple spare disks, same size, just so I could clear one off and start fresh

I've downloaded the 8+ gig, s/w and done the restore onto a fresh disk.

I assume this image is the "stock" Z2 image?

I also have a Z2BybassUpdate.iso. Do I need to apply the files in this image over the restored image?

Yes, it's stock except that the Z2BybassUpdate.iso has already been applied to the Z2 image.
