Can anyone please tell me why my phone settings and nav settings would be greyed out.

Just guessing here, but is your unit installed with the bypass? If not, you might have to engage the parking brake before you can change the settings...

Yep, unless you bypassed the unit, you need to enable the parking brake to access any of those menu's that could be dangerous while driving.
