Just a quick question...How big of a amp would I need to power a 8 inch or 10 inch sub???

Too vague of a question. Subs vary from different brands, some can handle more than others. Look at the specs of the subs you're interested and match the RMS wattage.

Who is the manufacturer of your sub woofer and what is the model number?

In most cases I wouldn't power an 8-10" sub with more than 250 watts of power(RMS).

What I would do is google the sub woofer model number for the specs and then buy an amp that has a rating of 25-50 more watts RMS than the woofer can handle. Just make sure you don't turn the bass all the way up and you won't blow/fry anything. You should never run your amp at max RMS power consistently regardless of the fact that it's rated for that. Try to keep it down by about 10% by adjusting the bass level.
