I use a program called Handbrake. Very good software to convert DVDs or movie-files to iPhone/iPod.
It also allows you to make your own pic/sound settings and add subtitles o so on.

Awesome, thank you for posting that! Do you happen to know the pixel dimension to use for a 1st gen iPod Touch? Also, do you need to know what kind of compression to use before converting the DVD?
