Whats the best way to ground the two wires?

#1 wire....disconnect from the e-bake switch and run the wire to a bolt or screw?

#2 wire...Relocate a wire and then connect it to the unit's ground wire via a connector?

This stuff is basic to some of you folks but I have very little experience with automotive electrics.

Are there better ways?

Here is the easiest.

Wire #1 and #2 just connect them both to the black ground wire on the rear of the Z. All 3 of these wires will be attached to the vehicle ground.
