please help ! where do I hook the vss wire on a 2000 f-250

Gray with a black stripe at pin 68 (or pin 58 if it is a SuperDuty) at the Powertrain Control Module on the Drivers side of the firewall. I don't think you can find it in the radio harnes for that year, I don't recall when they did the switch to the newer harness. Go ahead and look in the radio harness anyway, gray/black.

They switched over to the 1771 harness in 99 on the f250s. Depending on the radio that's in the truck, the vss will be in the harness as jimmy303 stated otherwise, you'll have to hit the pcm for it.
