So just installed this a few days ago, was working great, changed some settings (nothing related to screen backlight), and now the stupid LCD stays on. How do I fix this, and prevent it from happening again?

Take out the faceplate and take a look at the ON/OFF switch which is on the top side. It could be set to ON which will keep it on whether the car is on or not.

Any updates on this issue??? The switch on top of the unit is in the "off" position.
