On the AppRadio3 (SPH-DA210), would I be able to play Pandora on the head unit via Bluetooth from my iPhone 5s and run a navigation app on the phone's screen (not through the head unit) at the same time?

Yes. Your nav directions would come in through bluetooth as well. I'm curious though. The whole point of the AppRadio is well...Apps. Why don't you want to display stuff on the screen?
