Quite a creative idea. Assuming you get your hands on the UDock that has the Video out and it's compatible with the newer 'locked' ipods (apple locked the video out unless the ipod detects a certain piece of hardware in the dock or cable you're using), there's no reason that shouldn't work. Of course, the lack of the little locks on the dock would mean you'd have to find a way to mount it somewhere in your car where the ipod would stay upright so as not to fall out or bend the connectors.

Everytime I start the car, the Nav comes up and a big black screen stating that I should drive the car and not play with the stereo comes up and I have to press ok. Is there any way to kill this screen?

I literally just finished my install in my 2001 Ford Escape. Holy balls. I didn't realize what a pain it was going to be to get it into the dash opening. No wonder Crutchfield said it doesn't fit. It fits, and it actually fits really well inside the trim on that part of the dash, however getting it into the actual opening through the vinyl part of the dash was a nightmare. I had to cut, check, cut, check again, cut some more... ugh. A zip saw would have been nice, but I can't complain about a nice sharp leatherman either...
