  1. Same issue on my install. You have to engage the parking brake on these units to get most of the menu items to activate and get your phone to sync with the Bluetooth etc. Fought it for two weeks and felt pretty silly when I figured it out. Unfortunately as far as I know you can't stream your music over the Bluetooth nor can you get your IPhone to play just using the USB. You have to get the Iphone connector that has the USB and AV connections. $10-$20 on Ebay and it should work fine.
  2. Had this happen with a unit that I bought used and am embarrassed to admit that the issue the whole time was the parking break wasn't engaged. The only icons that could be viewed were the radio and AV settings, everything else was grayed out as you describe. Once I put on the parking brake I could link the Bluetooth with my IPhone (pw is 1111 to link btw), get into the other settings etc. Once your up, I would also check the sw versions and make sure you have the latest installed. Pioneer has both the firmware and Bluetooth SW updates for the F700bt on their support site. I followed the i
